Mornings with your twin toddlers are hectic enough. Getting everybody dressed and out the door in time to beat traffic and get to your destination on time can feel like a never-ending marathon.
Add Back to School into the mix, and you've got a recipe for racing around, which can work up quite an appetite for everybody involved.
It can be easy to forget to fuel your body, while you're busy getting everybody else fed and on their way.
This easy breakfast is a cinch to make, and, better yet, it's in a form that you can easily take with you while you're on-the-go, so it's the perfect breakfast for the Back to School season.
Back-to-School Pancake Bites Recipe

Starting your day with soft and fluffy pancakes would be nice—if it weren't so time-consuming.
This twist on a classic breakfast makes it easy to grab 'n' go, no matter where you're going.
Pancake Bites Ingredients
- A double-batch of pancakes from a pre-made mix (I used an extra-fluffy buttermilk formula and doubled it because my twins went through these bites as quickly as I suspected they would)
- 2 ⅔ cups water (my mix called for 2 ⅔ cups water; yours may call for a different amount of water or ingredients, so follow the pancake mix instruction on your specific packaging, and remember to times the amount by two if you're making a double-batch)
- 1 cup fresh strawberries, chopped
- 1 cup fresh blueberries, halved if large
- 1 cup fresh kiwi, chopped
Method

Line a cupcake pan with reusable liners and preheat the oven to 375°.
Mix up a double-batch of pancakes using your pre-made mix, following the instructions on the packaging.
Use a scoop to transfer the batter into the muffin liners.
Spoon your desired toppings into each liner (substitute different fruit, if you like). Bake at 375° for 15-20 minutes.You know they're done when you insert a toothpick and it comes out clean.
Note, if you use kiwi, like me, be sure to bake your muffins about seven minutes longer (remove the non-kiwi bites after 15 to 2o minutes, or they'll get burnt or dried out) because the fruit is moist and will otherwise stay soggy once the bites are cooled.

Refrigerate in an airtight container once they're baked to keep them fresh, and grab 'em as you need 'em.
They're that simple, and they're a hit for hungry toddler tummies (and hungry parents, who can enjoy them after the morning drop-off).

And because you're taking them on-the-go, you avoid the scary syrup situations that leave you with double the amount of sticky hands at home. No syrup, no mess. Just fresh, fluffy pancake goodness.
