When Cinco de Mayo falls on Taco Tuesday, you KNOW what's on the menu.
You should probably have tacos because the next time May 5 lands on a Tuesday won't be until 2037.
For real. Instead of being just six years away, the Leap Year pushes this phenomenon 11 years into the future.
To celebrate the momentous timing of Cinco de Mayo falling on Taco Tuesday, here's one of our favorite recipes.
The easiest slow cooker recipe for chicken tacos
Ingredients
For the slower cooker
- 4 boneless skinless chicken breasts
- ½ can black beans
- 1 cup salsa
- 1 cup canned diced tomatoes
- 1 ounce taco seasoning
For the Build Your Own Taco Bar
- Cooked rice
- Grated cheese
- Avocado, sliced, chopped, or smashed
- Sour cream or greek yogurt for dipping
- Taco shells, taco bowls, or pita pockets for smaller toddler hands
Method
Dump the salsa into your slow cooker.
Place the chicken breasts on top of the salsa in the slow cooker and cover them with the diced tomatoes, black beans, and taco seasoning.
Depending on what your day looks like, cook it on low for seven to eight hours or high for three to four hours.
When there's 20 or 30 minutes left on the timer, cook your rice, grate your cheese, and smash your avocado.
Pro tip: Keep the pit from the avocado and put it in the bowl to keep the avocado mixture from going brown.
Once the chicken is done cooking, remove it from the slow cooker and shred it.
Pro tip: You can shred four chicken breasts in less than 10 seconds by using your hand mixer to rip it apart lickety-split.
Then, put the chicken back in the slow cooker and stir everything all together.
Then, have fun assembling tacos
While the chicken sits in the slow cooker on Keep Warm mode, set up a Build Your Own Taco Bar with all the accoutrements: taco shells or taco bowls, cooked rice, grated cheese, avocado, sour cream.
Lay everything out on a lower table your toddlers can reach, get them their own plates and taco shells or bowls, and let them decide what goes in their taco.
They'll have fun with the freedom to pick which ingredients they want (our twins tried more than I thought they would when we gave them this option), and they'll also work on their fine motor skills while they build their own tacos.
Then, chown down and revel in the fact that you're enjoying tacos together on May 5 and that this exact day won't fall on a Tuesday again for another 11 years.
You should probably have more than one.
